Our leadership team brings years of experience across hospitality, spirits, and design, but what makes this place special is the way we continue to build it together. ReGina
ReGina is a creative visionary and social entrepreneur with a deep love for Saint Paul. ReGina Clapp is a seasoned executive with over two decades of experience in project management, process improvement, risk management, and change management. Her career has grown and flourished within a Fortune 500 environment, where she’s earned a reputation for leading with clarity, purpose, and heart. ReGina’s ability to build trust, foster collaboration, and enhance the customer experience makes her a critical and inspiring force to her team.
But it’s her warmth, generosity, and deep love for people that truly sets her apart. ReGina finds her greatest joy in being “mom” to two wonderful boys and “bonus mom” to two amazing daughters. She pours the same care into her community, serving as a peer mentor guide with Firefly Sisterhood—walking alongside women navigating breast cancer with empathy, strength, and unwavering support.
Liza
Liza is a hospitality professional with over twenty-five years of experience leading operations, training, and concept development. In addition to her ownership role here at Voliere, Liza also serves as Chief Operating Officer for Rob Clapp’s hospitality company, Eclective, which oversees multiple venues throughout Saint Paul. Her leadership is rooted in empathy, accountability, and a deep respect for the art of true hospitality.


Grete
Grete has been responsible for creating the cocktail art at CrowBar and has been an integral part of the tasting team that helped develop our spirits at Voliere. She is the person who brings our cocktails to life, from concept to first taste. Her creativity, precision, and deep understanding of balance make her an essential part of both the Voliere experience and our broader hospitality family.
Seth
Seth brings craftsmanship, curiosity, and a wealth of experience to every stage of Voliere’s production. With a background in both distilling and winemaking, he approaches each project with a deep understanding of fermentation, flavor development, and balance. His expertise drives Voliere’s pursuit of quality, consistency, and innovation. Seth sees distilling as both art and science, transforming raw ingredients into spirits that tell a story of place, process, and purpose.
